What You’ll Need: 1 package of Jenny O ground turkey meat 1 package of Mexican style cheese 1 medium can of La Victoria enchilada sauce( reserve 2 tablespoons for Mexican Rice) 1 green onion thinly sliced 1/4 cup each of onion and bell pepper 1 large clove of garlic minced 1 cup of rice 3/4 cup of frozen mixed vegetables Seasonings: Seasoned salt McCormick Pepper Medley Paprika ground cayenne pepper chili powder 1/3 bay leaf Here’s how to do it: First heat a large skillet with olive oil, and saute onions, and bell pepper along with the 1/3 piece of bay leaf; when translucent add in Jenny O ground turkey, and garlic(you don’t want to add in the garlic with the onions because it will burn), season to taste with Season Salt McCormmick pepper medley, paprika, and cayenne pepper. Using a potato smasher grind the meat up as you cook it on medium high heat. Cook thoroughly, and set aside Next lightly fry your taco shells, in 1/3 cup of canola oil, and set on a cookie sheet lined with paper towels. In the mean time, season the La Victoria enchilada sauce with chili powder,paprika, and pepper medley, them slightly warm up the enchilada sauce in a large sauce pan.
